Chocolate Zucchini Bread


  • 3 eggs
  • 1 cup canola oil
  • 2 cups sugar
  • 2 cups blended zucchini
  • 3 Tbsp vanilla
  • 3 cups flour
  • 1 tsp cocoa
  • 1 tsp baking powder
  • ¼ tsp nutmeg
  • ¼ tsp cloves
  • 1 tsp salt
  • 3 tsp cinnamon


  1. Preheat oven to 350 F
  2. Beat eggs until foamy.
  3. Add the rest of the ingredients and mix.
  4. Bake for about an hour in a loaf pan, 12 minutes in a mini muffin tins, 20 minutes for a regular sized muffin tin
